More grilled cheese. There are also some variant answers depending on which cheese you're using. A pork product may be added, too.

As I mentioned to Ryk, it's pretty much cheddar or nuthin;.

And it sounds like you prefer grilled bacon sandwiches with some cheese instead of a grilled cheese sandwich. Hmf!

Grilled American or Cheddar cheese with tomato and bacon. The sharper the cheese, the thicker the bacon. Very sharp Vermont cheddar is the best, with very thick maple bacon.

Gruyere cheese with a thin slice of good ham, like a croque monsieur.

For both of the above, the bread must be well-buttered before grilling.

Grilled cheddar cheese that's been grated up with dry mustard and some Worcestershire -- like a Welsh rabbit without the beer. Best spread on toast and broiled open-faced, tomato & bacon optional.

Creamy tomato soup is an acceptable accompaniment. Sharp pickles on the side, if you're a pickle fancier. (I'm not.)

I like grilled onions or mushrooms in my grilled cheese sometimes, but it's good all on it's own as well. I haven't found a cheese I didn't like for filling.
Have you ever tried brie? I love it with roasted red peppers between slices of sourdough, but you need to use extra butter.

Onions sound good.

I find that mozarella doesn't really work for grilled cheese. Even if I add pepperoni or something, the flavor is too bland and the cheese to stringy.
